I don’t quite consider myself a food snob but I was lucky to grow up around some of the finer kitchens and had an appreciation for the art of plating from a young age. When Johnnie Walker asked me to capture some moody shots of their Blue Label Bothy in Hong Kong, I relished the opportunity.

Watching the chefs at work as they prepared their tasting menus was hectic, but definitely a favourite of the two day shoots I have done this year. The thriving food scene in Hong Kong is starting to distinguish between standard, cookie-cutter photography and the kinds of moods you see here, and both chefs were incredibly accommodating with backstage access. If I may be allowed to beat my chest a little, sometimes a Michelin-star meal deserves photography of the requisite standard. Too often in Hong Kong, you see the polar opposite.
